If you don’t have something already prepared, here are some quick and easy dessert recipe ideas that can be made without too much work.

Most of these can be whipped up in a pinch:

Faux Cheesecake

1 package of cheesecake flavored Jello (large)
1 container of Cool Whip
1 graham cracker crust (or crushed pretzels with ¼ cup melted butter mixed and pressed into pie pan)
1 can of blueberry pie filling

Directions: Mix the package of Jello with the container of Cool Whip in a large mixing bowl. Pour into crust. Let set in refrigerator for 1 hour. Top with blueberries.

Hawaiian Dessert

1 can mandarin oranges (drained)
1 can pineapple tidbits (undrained)
1 container Cool Whip
1 package orange Jello
½ cup chopped walnuts
¼ cup shredded coconut
1 Sara Lee pound cake

Directions: Mix first four ingredients in a large bowl. Allow to set in refrigerator for at least 1 hour. Spoon a large tablespoon of mixture on top of a slice of pound cake. Top with walnuts and coconut as a garnish.

Angel Food Cheat Cake

1 box of angel food cake mix
1 can of cherry pie filling
1 container of whipped cream cheese frosting

Directions: Mix dry cake mix with can of cherry pie filling. Pour into a floured cake pan and bake per package directions. Cake is done when a fork inserted in the middle comes out clean. Allow cake to cool. Place frosting in a plastic sandwich bag with one corner snipped off (about 3 cm). Use the sandwich bag to draw your design on the top of the cake. Flowers, names, smiley faces, or cherries are good ideas for designs for this fun, tasty, simple cake.

Spicy Cake for Fall

1 box of spice cake mix
1 can pumpkin
1 small container of applesauce (1 serving)
½ cup raisins
¼ cup chopped pecans (optional)
Caramel sauce (optional)

Directions: Mix dry cake mix with can of pumpkin, applesauce, and raisins. Bake according to package directions. Add chopped pecans to the top of the cake when there is 5 minutes left to cook. Serve warm with vanilla ice cream and caramel sauce.

Baked Pears and Apples

Apples and Pears
1 cup boiling water
Cinnamon, nutmeg, raisins, pecans
Butter

Directions: Cut in half and core pears and apples so that there are no seeds. Place in a glass baking pan so that cored sides are facing up. Place a pat of butter in each “core.” Sprinkle with cinnamon, nutmeg and sugar, and pour boiling water into bottom of pan. Top with raisins and bake at 375 F for 30-40 minutes. Use liquids at bottom of pan to baste tops of fruits before serving with vanilla ice cream.
